Many non vegetarian food lovers enjoy mutton curry, but cooking tough mutton can often become a frustrating task. Even after spending hours in the kitchen, some pieces remain hard and difficult to chew. However, using a few natural ingredients and the right cooking method can make even firm mutton pieces soft, juicy, and easy to eat.
One of the most effective traditional methods to soften mutton is using raw papaya. Raw papaya contains natural enzymes that help break down tough meat fibers, making the pieces tender during cooking. This technique is widely used in many kitchens to improve the texture of meat without relying on artificial tenderizers.
To prepare the marination, raw papaya can be cleaned, ground into a smooth paste, and added to washed mutton pieces. Along with the papaya paste, ingredients like salt, turmeric, chilli powder, and ginger garlic paste can be mixed well and applied evenly to the meat. Allowing the mutton to rest for around 20 to 30 minutes helps the enzymes work on the meat, making it softer before cooking.
If raw papaya is not available, other natural options can also help improve tenderness. Adding curd or a small amount of lemon juice during marination can soften the meat and enhance its flavor. These ingredients also help the spices blend better with the mutton, resulting in a richer taste.
The cooking method also plays an important role in getting perfectly soft mutton. Instead of cooking tough pieces directly in an open pan, using a pressure cooker can save time and improve the texture. After marination, the mutton can be cooked in a cooker with enough water on medium flame until it releases around five to six whistles.
For a flavorful mutton curry, heat oil in the cooker and add whole garam masala spices. Once the spices release their aroma, add chopped onions and green chillies and cook until the onions turn golden brown. Ginger garlic paste can then be added and cooked until the raw smell disappears. After adding coriander powder, salt, and tomatoes, the mixture should be cooked well before adding the marinated mutton pieces.
The mutton should be cooked with the masala for a few minutes before adding water and closing the cooker lid. Once the pressure releases, finishing the curry with garam masala and fresh coriander leaves adds extra aroma and taste. Cooking it for a few more minutes on low flame helps the flavors come together.
A few small preparation steps can also make a big difference. Washing the mutton properly and removing excess water before cooking helps the spices coat the pieces better. Allowing the spices to fry well in oil before adding the meat also improves the overall taste of the curry.
