But when these chillies are transformed into a stuffed masala curry, the story changes completely. This stuffed green chilli curry is a classic style dish that brings together roasted lentils, sesame seeds, coriander and coconut into a rich filling. Once the spices are blended and gently cooked inside the chillies, the dish develops a deep flavour that pairs beautifully with hot rice, soft chapati or even simple rotis. It is the kind of recipe that quietly surprises anyone who tastes it for the first time.
Preparation begins with selecting large green chillies that can hold the stuffing. They are washed carefully and slit lengthwise to remove some seeds, reducing the raw sharpness. Meanwhile, a mix of chana dal, coriander seeds and sesame seeds is lightly roasted to bring out their natural aroma.
In a separate pan, onions and garlic are sautéed until they turn golden and fragrant. Turmeric, chilli powder and salt are added next, followed by the roasted spices.
