Making jowar or corn flour rotis can often be challenging because these flours do not contain the same gluten content as wheat flour. However, a simple kitchen trick can help prepare soft, flexible and restaurant style rotis without much effort.

The secret ingredient behind better texture is boiled potato. Adding grated boiled potato to the flour improves the binding of the dough and helps the roti hold its shape while being rolled. The moisture present in the potato makes the dough smoother, allowing the rotis to become thinner and softer after cooking.

To prepare these soft rotis, begin by boiling one or two potatoes and removing their skin. Instead of mashing them by hand, grate the potatoes finely so they mix evenly with the flour without forming lumps. This step helps distribute the moisture throughout the dough and creates a better consistency.

Take the required amount of jowar or corn flour in a wide bowl and add the grated potato along with salt, finely chopped coriander and a small amount of ajwain if preferred. Mix all the ingredients well before adding lukewarm water gradually. Adding water slowly helps achieve the right dough texture and prevents it from becoming too loose.

Once the dough is prepared, keep it aside for around 10 minutes. This resting period allows the ingredients to combine properly and improves the softness of the final roti. After resting, divide the dough into small portions and flatten them using butter paper or plastic sheets, making the process easier and reducing the chances of cracks.

The potato added to the dough works as a natural binder, helping the edges stay intact while pressing the roti. This makes it possible to create thinner rotis that do not break easily during cooking. The method is especially helpful for beginners who find traditional millet based rotis difficult to prepare.

Heat a pan properly before placing the prepared roti on it. Cook both sides evenly and apply a small amount of ghee or butter while roasting to enhance the taste and softness. The result is a warm, flavorful and smooth roti that pairs well with curries, pickles and traditional side dishes.

This easy cooking technique can make a noticeable difference in the texture of homemade jowar and corn rotis. With just one common kitchen ingredient, a difficult recipe becomes simpler while delivering softer and more enjoyable results.
