Restaurant Style Pepper Chicken Recipe for a Perfect Sunday Feast

Sunday lunches often call for something special, and many people look for dishes that feel festive yet are easy to prepare at home. In many households, weekends are incomplete without a non vegetarian treat. Instead of preparing the usual chicken curry or biryani, pepper chicken offers a refreshing change with its bold flavors and quick preparation method. The combination of pepper and spices not only enhances taste but also adds a warming quality to the dish, making it enjoyable during seasonal changes as well.
To begin the preparation, half a kilogram of cleaned chicken is taken in a bowl. It is mixed with red chili powder, coriander powder, turmeric, garam masala, salt, and thick curd. The chicken pieces are coated well so that the spices absorb properly. Allowing the mixture to rest for a short time helps enhance the overall flavor and tenderness.
Meanwhile, a pan is placed on the stove and sesame oil is added. Once the oil heats up, ginger pieces, chopped garlic, and curry leaves are added and sautéed until a pleasant aroma develops. Ginger garlic paste is then added and cooked until the raw smell disappears. Sliced onions are included next and fried until they turn golden brown, forming a rich base for the dish.
At this stage, the marinated chicken is added to the pan. The flame is kept low to ensure the meat cooks evenly and remains juicy. The chicken is allowed to cook slowly for around fifteen minutes, absorbing all the flavors from the spices and onions.
While the chicken cooks, pepper and fennel seeds are ground together into a coarse powder. This freshly prepared spice mix is added to the chicken during the cooking process, giving it a distinctive aroma and sharp taste that defines pepper chicken.
As cooking continues, the mixture is gently stirred so the spices coat each piece evenly. In the final stage, the pan is left uncovered so the moisture reduces and oil begins to separate naturally. This step enhances both texture and flavor, giving the dish a restaurant style finish.
Once the oil rises to the top and the chicken turns dark and richly coated with spices, the dish is ready to serve. Hot pepper chicken pairs perfectly with steamed rice or even simple rasam rice, making it an ideal Sunday meal to enjoy with family at home.
