Leftover rice often ends up in the trash, but it can easily become the star ingredient of a delicious breakfast. With just a few simple ingredients already available in most kitchens, you can prepare crispy and fluffy paniyaram in about 15 minutes. Unlike traditional paniyaram that is usually prepared with fermented batter or semolina, this version uses cooked rice as the main ingredient. The result is a soft texture inside with a golden crispy layer outside. It also gives families a smart way to make use of leftover food without compromising on taste.
To begin, place the leftover cooked rice in a blender. Add a small amount of curd or water and blend until you get a smooth paste. Transfer the mixture to a bowl, add semolina and a little more curd, then mix everything thoroughly. Let the batter rest for about 10 to 15 minutes so the semolina absorbs moisture. This step helps create a soft and evenly cooked texture.
While the batter is resting, prepare a simple seasoning. Heat a small pan with a little oil and add mustard seeds, chopped green chilies, and curry leaves. Once they release their aroma, mix the seasoning into the batter. You can also stir in finely chopped onions, grated carrots, coriander leaves, or any vegetables of your choice to add more flavor and nutrition.
Just before cooking, mix a small amount of baking soda or fruit salt into the batter. This helps the paniyaram become light and airy. Avoid leaving the batter for too long after adding it because the rising effect works best when cooked immediately.
Heat a paniyaram pan over medium flame and lightly grease each cavity with oil. Spoon the batter into the moulds and cook until the bottom turns golden brown. Carefully flip each paniyaram and cook the other side until it is evenly crisp and fully cooked.
Cooking over medium heat is important because it allows the inside to cook thoroughly while giving the outside a beautiful golden finish. High heat may brown the surface too quickly and leave the center undercooked.
