Kadai Chicken Fry Recipe: The Secret Behind Its Spicy Dhaba Taste

Chicken dishes are a favourite choice for many families when planning a special weekend meal or dinner at home. While regular chicken curries and fries are common, trying a spicy dhaba style kadai chicken fry can bring a completely different taste experience to the table.

Many people believe that authentic kadai chicken can only be made in restaurants or highway dhabas. However, with freshly roasted spices and the right cooking technique, the same rich aroma and bold flavour can be recreated easily in a home kitchen. The combination of spicy masala, crunchy vegetables, and perfectly cooked chicken makes this dish a popular choice among non vegetarian food lovers.

The highlight of this recipe is the freshly prepared kadai masala. To make it, roast two tablespoons of coriander seeds, one tablespoon of cumin seeds, one tablespoon of black pepper, four to five dried red chillies, and half a tablespoon of fennel seeds on a low flame. Once the spices release their aroma, allow them to cool and grind them into a slightly coarse powder. This fresh spice blend gives the chicken its signature dhaba style taste.

For the chicken preparation, you will need 500 grams of chicken, two finely chopped onions, two tomatoes, one capsicum, one cup of onion cubes, one tablespoon of ginger garlic paste, one tablespoon of chilli powder, half a tablespoon of turmeric, one tablespoon of kasuri methi, fresh cream or butter if preferred, coriander leaves, salt, and three to four tablespoons of oil or ghee.

The cooking process starts by heating a small amount of oil in a kadai and lightly frying the capsicum pieces and onion cubes on high flame for about two minutes. They should remain slightly crunchy instead of becoming completely soft. Remove them and keep them aside for later use.

In the same kadai, add the remaining oil and fry the cleaned chicken pieces with turmeric and salt until the excess moisture disappears and the chicken gets a light roasted texture. Remove the chicken temporarily and begin preparing the masala base.

Add chopped onions to the kadai and cook until they turn golden brown. Then add ginger garlic paste and fry until the raw smell disappears. Tomato puree and chilli powder are added next and cooked until the masala becomes thick and the oil starts separating from the mixture.

The roasted chicken pieces are then added back into the kadai and mixed well with the prepared masala. Add two to three spoons of the freshly ground kadai masala and coat the chicken evenly. Cover and cook on a low flame for around eight to ten minutes until the chicken becomes tender and absorbs the flavours.

Once the chicken is completely cooked and reaches a dry fry consistency, add the previously fried capsicum and onion pieces. Finish the dish by adding crushed kasuri methi, a little fresh cream or butter, and chopped coriander leaves. Mix everything well and turn off the flame after a minute.

This spicy kadai chicken fry is best enjoyed with hot rotis, naan, chapati, or pulka. The freshly roasted spices and dhaba style preparation make it a perfect choice for family dinners and special occasions, bringing restaurant flavours straight to your home kitchen.
