Start by washing the mushrooms properly and removing excess water completely. Once they are dry, cut them into thin slices. Take a bowl and mix the mushroom pieces with chopped onions, green chillies, curry leaves and coriander leaves.

Add gram flour, rice flour, chilli powder, turmeric powder, cumin seeds or carom seeds, salt and ginger garlic paste to the mixture. Combine all the ingredients well and add only a small amount of water if needed. The batter should remain thick because a thin mixture will not provide the required crispiness.

Heat oil in a pan and keep the flame at medium level. Drop small portions of the mixture into the hot oil and fry until they turn golden brown and crunchy. Remove the pakodas and place them on tissue paper to absorb extra oil.
