How To Make Jeera Pulao
Start by washing the basmati rice two or three times until the water becomes relatively clear. Soak the rice in water for about 30 minutes. Drain it completely before adding it to the cooking pot.
Next, finely slice the onion. Heat ghee or butter in a pan or pressure cooker and add the onion. Cook it until the pieces turn lightly golden. If you like a more attractive presentation, you can remove a small portion of the fried onion and keep it aside for the final garnish.
Now add the cumin seeds to the same pan. Let them sizzle gently in the hot ghee. This step is important because roasting the cumin releases its aroma and gives the pulao its characteristic flavour.
Add the green chilli, mint leaves and coriander. Stir them briefly so their freshness blends with the cumin and ghee. There is no need to cook the herbs for too long.
Add the soaked and drained basmati rice to the pan. Pour in the required amount of water and add salt according to taste. Stir gently just once so the ingredients are evenly distributed.
Bring the water to a boil. If using a pressure cooker, close the lid and cook over medium heat according to the cooker and rice quantity you normally use. Once the rice is cooked, allow the pressure to release completely before opening the lid.
When you open the cooker, the rice should look separate and fluffy. Add the reserved fried onions along with a little fresh mint and coriander. Gently fluff the rice instead of stirring it vigorously.
