Take a large bowl and add gram flour and rice flour. Add the chopped fenugreek leaves and sliced onions along with ginger and green chilli paste, cumin seeds, turmeric powder, baking soda and salt.

Mix everything well with your hands before adding any water. The moisture released from the onions and fenugreek leaves will help the flour bind together. If necessary, sprinkle a little water and make a firm mixture. Avoid making the batter too loose because a thick mixture helps create a better crunchy texture.

Heat enough oil in a deep pan over medium heat. Once the oil becomes hot, take small portions of the mixture and gently drop them into the pan. Do not overcrowd the pan, as the pakodas need enough space to cook evenly.
