To prepare this South Indian style crab fry, the main ingredients include half a kilogram of cleaned crabs, two finely chopped onions, two chopped tomatoes, ginger garlic paste, green chilies, curry leaves and fresh coriander. Spices such as turmeric, red chili powder, coriander powder, pepper powder and garam masala are added to create the signature flavor.

The preparation begins with cleaning the crabs properly. Remove the top shell and unwanted internal parts, then wash the pieces several times with water along with turmeric and salt. This step helps reduce the seafood smell and prepares the crab for cooking.

After cleaning, marinate the crab pieces with a small amount of turmeric, chili powder, ginger garlic paste and salt. Keep them aside for around 15 minutes so the flavors can absorb well into the meat.

Heat oil in a pan and add fennel seeds, cumin seeds, green chilies and curry leaves. Allow them to release their aroma before adding sliced onions. Cook the onions until they turn golden brown, then add ginger garlic paste and fry until the raw smell disappears.

Next, add chopped tomatoes and cook until they become soft. Once the tomatoes blend into the masala, add chili powder, coriander powder, garam masala and salt. Continue cooking until the spices are well roasted and oil begins to separate from the mixture.

Add the marinated crab pieces to the prepared masala and mix thoroughly so the spices coat every piece. Pour in half a cup of water, cover the pan and cook on medium flame for around 10 to 12 minutes. Crab cooks relatively quickly, so keeping an eye on the texture helps maintain its softness.

Once the crab fry is ready, garnish it with fresh coriander leaves before serving. The final dish delivers a spicy aroma, rich seafood flavor and traditional homemade taste that pairs beautifully with steamed rice or other South Indian meals.
