Ingredients Required
10 to 12 almonds soaked overnight and peeled
1 tablespoon poppy seeds soaked overnight
2 teaspoons pure desi ghee
1 cup fox nuts or phool makhana
Three fourth cup wheat semolina
4 cups low fat milk with cream removed
1 inch piece of cinnamon
Three fourth cup rock sugar or sweetener according to taste
Half teaspoon cardamom powder
Preparation Method
Prepare Almond and Poppy Seed Paste
Soak almonds and poppy seeds separately in water overnight. The next morning, remove the almond skin and drain the water from the poppy seeds.
Blend both ingredients with a little milk or water until they form a smooth paste. Soaking almonds helps soften them and makes them easier to digest. Removing the skin can also improve their texture.
If you forget to soak them overnight, almonds can be soaked in warm water for around 30 minutes before use.
Roast Makhana and Wheat Semolina
Heat a pan and add one teaspoon of desi ghee. Once melted, add the fox nuts and roast them on a low flame until they become slightly golden and crisp. Transfer them to a plate.
In the same pan, add another teaspoon of ghee and roast the wheat semolina. Continue cooking until the semolina changes colour slightly and releases a pleasant aroma. Roasting helps improve the flavour and allows the semolina to cook faster.
Cook the Milk Mixture
Add four cups of low fat milk to the roasted wheat semolina. Using low fat milk helps reduce excess calories while keeping the dish nutritious.
Add a piece of cinnamon and allow the milk to boil well. Cinnamon provides a rich aroma and enhances the overall taste of the porridge.
Combine and Cook the Porridge
Once the milk starts boiling, add the prepared almond and poppy seed paste. Mix everything well and cook on medium flame for around 7 to 8 minutes.
Keep stirring occasionally until the wheat semolina becomes soft and the mixture reaches a slightly thick consistency.
Add Final Flavours
When the porridge becomes thick, add crushed rock sugar according to your preferred sweetness. You can also use jaggery or regular sugar as an alternative.
After the sweetener dissolves completely, add the roasted makhana and cardamom powder. Mix well and serve warm.
