Crispy Medu Vada Recipe for a Delicious and Filling South Indian Meal

Begin by washing the urad dal thoroughly and soaking it in water for four to five hours. Once the dal has softened, drain all the water completely. Transfer it to a mixer grinder and grind it into a thick batter without adding extra water. The batter should remain firm, as a runny consistency will prevent the vadas from holding their shape.
Move the batter into a large mixing bowl and beat it well by hand for about four to five minutes. This step is important because it incorporates air into the batter, resulting in lighter and softer vadas after frying. Once the batter becomes airy, add the chopped green chilies, grated ginger, curry leaves, coriander, black pepper powder, asafoetida and salt. Mix everything thoroughly until the ingredients are evenly distributed.
Heat enough oil in a deep pan over medium heat. Lightly wet your hands with water, take a small portion of the batter and shape it into a round disc. Make a small hole in the center using your thumb to create the traditional Medu Vada shape. Carefully slide the prepared vadas into the hot oil.
Fry the vadas on medium heat, turning them occasionally so they cook evenly on both sides. Continue frying until they develop a rich golden brown color and a crispy texture. Once cooked, remove them from the oil and place them on a paper towel to absorb any excess oil.
Serve the Medu Vadas immediately while they are still hot. They taste best with steaming sambar, coconut chutney or spicy tomato chutney.
