Leftover Rice Makes an Easy Oil Free Breakfast

Leftover rice can become a soft oil free breakfast with rice flour green chilli and salt, offering a quick way to reduce food waste while creating a tasty homemade meal.

Waking up to a container of leftover rice from the previous night is common in many homes. Instead of reheating the same rice or throwing it away, it can be turned into a simple breakfast with just a few ingredients.

Rice flour, leftover rice, green chilli and salt are enough to prepare soft homemade rotis without adding oil or ghee. The preparation is also fairly quick, making it useful on busy mornings when there is little time for an elaborate breakfast.

The texture of these rotis mainly comes from the moisture already present in the cooked rice. The rice is first ground into a smooth mixture and then combined with rice flour to create a dough that can be shaped and cooked on a pan.

To prepare the dough, take one cup of cooked leftover rice in a mixer jar. Add two or three green chillies and salt according to taste. Grind everything into a smooth paste without adding water.

Transfer the rice mixture to a wide bowl and gradually add about one cup of rice flour. Mix it well until the ingredients come together and form a soft dough. If the rice contains enough moisture, additional water may not be necessary.

Once the dough is ready, cover it and allow it to rest for around ten minutes. This short resting period helps the rice flour absorb moisture and makes the dough easier to handle.

After resting, divide the dough into small portions and shape them into balls. Dust the surface with a little rice flour and gently flatten each portion into a thin roti.

A hot pan is important at this stage, but the heat should be controlled. Place the roti on the pan and cook it over medium heat. Turn it over and allow both sides to cook until they develop light golden spots.

There is no need to add oil or ghee while cooking. Keeping the flame at a moderate level also helps prevent the rotis from becoming too hard. Very high heat can cook the outside quickly while making the final texture less pleasant.

The finished rotis can be served immediately with a spicy tomato chutney, coconut chutney or another homemade accompaniment. A roasted tomato and dry chilli chutney can provide a strong contrast to the mild flavour of the rice roti.

For those who prefer a coconut based side dish, ginger and coconut chutney can also work well. The combination can turn a very simple leftover meal into a breakfast that feels freshly prepared.

The biggest advantage of this recipe is its simplicity. There is no complicated preparation, and most of the ingredients are likely to be available in the kitchen already.

Using leftover rice in this way can also help reduce unnecessary food waste. Rather than allowing cooked rice to remain unused, it can be transformed into another meal with very little additional effort.

However, leftover rice should always have been stored safely before using it. Cooked rice should be refrigerated promptly rather than being left at room temperature for long periods. Rice that has an unusual smell, appearance or texture should be discarded instead of being reused.

This breakfast can be particularly convenient on mornings when time is limited. The dough can be prepared quickly, and the rotis can be cooked while other breakfast preparations are underway.

For a simple homemade meal, leftover rice, rice flour and a few basic ingredients can go a long way. With a spicy chutney on the side, the result is an easy breakfast that gives yesterday’s rice a completely different form.
