Kerala Style Fish Fry With Spicy Coconut Oil Flavor
Kerala Style Fish Fry combines fresh mackerel with ginger, garlic, chilli, tamarind and coconut oil, creating a crisp coating outside while keeping the fish tender inside.

A hot plate of Kerala style fish fry can easily become the highlight of a simple homemade meal. Mackerel works particularly well for this preparation because its flavour holds up nicely against the bold spices used in the marinade.
The recipe does not require a long list of ingredients. The main work is in preparing the spice mixture, allowing it to soak into the fish and then cooking it slowly on a pan until the outside develops a deep roasted texture.

3 to 4 mackerel fish
2 to 3 tablespoons coconut oil
A few curry leaves
Salt as needed
For the marinade
2 tablespoons ginger garlic paste
2 tablespoons Kashmiri chilli powder
Half teaspoon turmeric powder
1 tablespoon coriander powder
Half teaspoon black pepper powder
1 tablespoon tamarind juice
The fish should be cleaned properly before cooking. Make several shallow cuts on both sides of each fish. These cuts allow the marinade to reach further into the flesh and help the spices flavour the fish more evenly.
The marinade is where the characteristic taste begins. Add ginger garlic paste, Kashmiri chilli powder, turmeric, coriander powder, black pepper, tamarind juice and salt to a bowl. Mix everything until a thick paste forms.
If the mixture feels too dry, a small amount of coconut oil can be added. The marinade should be thick enough to coat the fish properly rather than running off the surface.
Spread the prepared mixture generously over both sides of the mackerel. Make sure some of the marinade reaches the cuts made earlier. Once coated, leave the fish to marinate for around 30 to 45 minutes.
This resting time gives the spices a chance to flavour the fish. If the fish is kept refrigerated during marination, allow it to sit out only as appropriate for safe cooking and avoid leaving seafood at room temperature for an extended period.
Once the marination is complete, place a heavy pan or tawa over medium heat. Add the coconut oil and let it become hot. A few fresh curry leaves can then be added to the pan for extra aroma.
Place the marinated fish carefully on the heated pan. Avoid using very high heat because the spice coating can burn before the fish has cooked through. Medium to low heat gives the fish more time to cook while allowing the outside to develop a roasted finish.
Cook the first side for around 3 to 4 minutes, depending on the thickness of the fish. Once the underside turns a deeper golden colour and the fish releases easily from the pan, carefully turn it over.
Add a little more coconut oil around the edges if needed. Cook the other side for another 3 to 4 minutes or until the fish is completely cooked through.
The exact cooking time can vary with the size of the mackerel and the heat of the pan. The flesh should be opaque and cooked through rather than translucent near the centre.
Coconut oil gives this preparation much of its familiar Kerala style character. Curry leaves added during pan frying also bring a pleasant aroma that works particularly well with the chilli and tamarind marinade.
Once the fish is cooked, remove it from the pan and allow excess oil to drain briefly. Serve it while hot with sliced onions and lemon wedges.
Kerala style mackerel fry works well alongside steamed rice and dal, but it can also be served as a side dish with a simple home cooked meal. The combination of tangy tamarind, warm spices and roasted fish makes it especially satisfying.
For a crispier finish, keeping the heat controlled is more useful than simply increasing the flame. A very high flame can darken the spices quickly while leaving the centre undercooked.
The recipe can also be adjusted according to taste. Kashmiri chilli powder provides colour and moderate heat, while black pepper adds a different layer of spice. Tamarind brings the slight sourness that balances the richness of the fish and coconut oil.
With a short marination and careful pan cooking, this Kerala style fish fry can be prepared without complicated equipment. It is a straightforward recipe that brings strong coastal flavours to an everyday meal.
