Healthy Onion Pesarattu Recipe For A Tasty Homemade Breakfast

A good breakfast does not always need complicated ingredients or a long cooking process. Onion pesarattu is one such dish that combines simple pantry staples with a satisfying taste. Made mainly with green gram and rice, it can be prepared at home with onions, ginger and green chillies for extra flavour.

Green gram is known for providing protein, fibre and several nutrients. Including it in a balanced diet can help make a meal more filling. The addition of rice gives the batter a pleasant texture, while cumin, ginger and green chilli bring a familiar South Indian flavour to the dish.

The batter does need a little preparation in advance. Green gram and rice should first be cleaned and washed well. Take one and a half cups of green gram and half a cup of rice, then soak them in enough water for around six to seven hours or overnight.

Once they have softened, drain the water and rinse the ingredients again. Transfer them to a mixer jar along with three green chillies and a roughly two inch piece of ginger. Add salt, a small amount of turmeric and enough water to grind everything into a smooth batter.

The consistency is important when preparing pesarattu. The batter should not be excessively thick or watery. A medium consistency similar to regular dosa batter makes it easier to spread evenly on the pan.

Transfer the ground batter to a bowl and mix in about one teaspoon of cumin. The batter can be used immediately, although allowing it to rest for one or two hours can help the flavours blend better.

While the batter is resting, the onion topping can be prepared. Finely chop one medium onion and combine it with one small green chilli and a little chopped coriander. Small pieces of ginger can also be added to the mixture for additional flavour.

The cooking process is quite simple. Heat a pan or traditional iron griddle over the stove and allow it to become properly hot. A regular griddle can give the pesarattu a distinctive taste, although other suitable pans can also be used.

Spread a small amount of oil over the surface and then pour a ladleful of batter onto the centre. Spread it gently into a thin, round layer. The thickness can be adjusted according to personal preference, but a thinner layer generally gives a crispier result.

The chopped onion mixture should then be distributed evenly over the surface. Add a small amount of oil around the edges and on top, and cook the pesarattu over medium heat.

As the edges begin to turn brown and the surface becomes firm, the pesarattu will start developing its crisp texture. It is important not to rush this stage. Allowing it to cook properly helps the base become golden and crisp without burning the onions.

Once the bottom is cooked, fold the pesarattu gently. If a crunchier texture is preferred, it can be cooked for a little longer on both sides.

The same process can be repeated with the remaining batter. Fresh onion pesarattu tastes particularly good when served hot with coconut chutney or ginger chutney.

The recipe can also be adjusted to suit individual taste. The amount of green chilli, ginger, salt and onion can be changed depending on preference. Those who prefer a softer pesarattu can keep it slightly thicker, while a thinner spread can provide more crispness.

Unlike many elaborate breakfast dishes, pesarattu does not require a complicated preparation method. Most of the work involves soaking and grinding the ingredients, after which the dosas can be prepared quickly on the pan.

It is also worth keeping the overall meal balanced. While green gram provides useful nutrients, no single dish should be considered a complete source of nutrition by itself. Serving pesarattu with chutney, vegetables or another suitable accompaniment can make the breakfast more varied.
