Ganesh Chaturthi Special Kudumu Recipe in Turmeric Leaves

Ganesh Chaturthi celebrations are often closely connected with homemade food, and traditional sweets have a special place on the festive menu. Along with familiar preparations such as modak, payasam and undrallu, many families also prepare regional recipes that have been passed down through generations.

One such preparation is kudumu cooked inside turmeric leaves. The recipe uses a simple rice based dough along with a sweet filling made from jaggery and coconut. What makes it different is the use of fresh turmeric leaves during steaming. As the kudumu cooks, the leaves lend a pleasant natural aroma to the dish.

The preparation does require some time, particularly for soaking and grinding the rice, but the ingredients themselves are simple. Rice, jaggery, coconut, salt, water, ghee and turmeric leaves are enough to make the festive sweet.

To begin, take two cups of rice and wash it thoroughly. Soak the rice in water for around two to three hours. Once it becomes soft, drain the water and grind the rice into a smooth mixture by adding a little water as needed.

The rice mixture then needs to be cooked to make the dough. Transfer it to a suitable vessel, add a little salt and cook over a low flame while stirring continuously. As the mixture cooks, it will gradually become thicker. Continue stirring until it reaches a dough like consistency.

The sweet filling can be prepared while the rice mixture is being handled. Grate one coconut and combine it with around 250 grams of jaggery. Cook the mixture gently until the jaggery melts and blends well with the coconut. The filling should not remain too watery, as a thicker mixture is easier to place inside the dough.

Turmeric leaves are the key part of this particular preparation. Take around ten leaves and wash them properly to remove any dirt. Wipe them dry and apply a very small amount of ghee over the surface. This can also help prevent the dough from sticking to the leaves.

Once the rice dough is comfortable enough to handle, take a portion and spread it into a thin layer over a turmeric leaf. The layer does not need to be perfectly shaped. Leave enough space around the edges so the leaf can be folded without the filling spilling out.

Place a portion of the jaggery and coconut mixture in the centre. Fold the turmeric leaf carefully so that the rice dough covers the filling. Repeat the process with the remaining dough, filling and leaves.

Arrange the prepared kudumu in a steamer and cook for around 25 to 30 minutes. The steaming time can vary depending on the thickness of the dough and the steaming setup. Once properly cooked, the rice covering should become firm and the filling should be soft.

Opening the leaf after steaming is one of the most enjoyable parts of the recipe. The aroma released from the turmeric leaf gives the kudumu a distinctive festive character. The combination of the mild rice dough and sweet coconut and jaggery filling makes it suitable for serving during Ganesh Chaturthi celebrations.

A little ghee can be added while serving if preferred. The kudumu is generally best enjoyed warm, when the filling is soft and the aroma from the turmeric leaf is still noticeable.

The ingredients are familiar, the cooking method is straightforward and the turmeric leaf gives the final dish a character that is difficult to achieve with ordinary steaming.

The important part is to avoid making the filling excessively loose or the rice layer too thick. A moderately thin outer layer allows the sweet filling and turmeric leaf aroma to stand out.
