Curd Egg Curry Recipe That Is Quick and Easy to Make at Home

Six eggs
Two and a half cups thick curd
One onion

How to prepare curd egg curry
Start by boiling the eggs. Place the eggs in a saucepan, cover them with enough water and cook until they are fully boiled. Once done, allow them to cool before removing the shells. Cut each egg into halves and keep them aside.
The curd needs a little attention before it goes into the pan. Take thick curd that is not overly sour in a bowl and whisk it gently until it becomes smooth. Add the required amount of salt and mix well.
Now prepare the fresh ingredients. Slice the onion into thin pieces and chop the green chillies and coriander leaves. Add these to the whisked curd and mix gently. There is no need to beat the mixture for a long time. The aim is simply to combine everything evenly.

Allow the curry to warm over a low flame for a few minutes. Avoid bringing it to a vigorous boil. Gentle heating helps keep the curd mixture smooth while allowing the flavours of the spices, onion and green chillies to come together.
Taste the curry and adjust the salt if needed. If you prefer a stronger flavour, the amount of green chilli can be adjusted according to your preference. Likewise, those who enjoy a milder curry can reduce the chilli.
Once heated through, switch off the stove and garnish with a little freshly chopped coriander. The curry is now ready to serve.
