Green Moong Dal Protein Laddus Made Without Sugar or Jaggery

The recipe brings together soaked green moong dal, nuts, seeds and dried fruits. Almonds, cashews, walnuts, pistachios, pumpkin seeds, sunflower seeds, chia seeds and flaxseeds add texture as well as a variety of nutrients.

Ingredients

One cup soaked green moong dal

Quarter cup each of almonds, cashews and walnuts

Two tablespoons pistachios

Two tablespoons pumpkin seeds

Two tablespoons sunflower seeds

One tablespoon chia seeds

One tablespoon roasted flaxseeds

Eight to ten deseeded dates

Quarter cup raisins

Two tablespoons ghee

Half teaspoon cardamom powder

Preparation method

Drain the soaked moong dal completely and spread it on a clean cloth for around 15 to 20 minutes. Once the excess moisture has gone, dry roast the dal in a pan over low heat until it develops a light aroma. Allow it to cool before grinding it into a slightly coarse powder.

In the same pan, roast the almonds, cashews, walnuts, pistachios and seeds separately or together over low heat. Avoid over roasting them. Once cooled, chop or crush the mixture into smaller pieces.

Next, heat ghee in the pan and add the chopped dates and raisins. Cook them for two to three minutes until they soften. This mixture helps bring the ingredients together and provides the laddus with their natural sweetness.

Add the roasted moong dal powder, nuts, seeds and cardamom powder. Mix everything thoroughly while the mixture is still warm. Turn off the heat and let it cool enough to handle.

Grease your palms with a little ghee, take small portions of the mixture and shape them into round laddus. If the mixture feels slightly dry, working it while warm usually makes shaping easier.

These laddus contain no refined sugar or jaggery. The dates and raisins provide the sweetness, while moong dal, nuts and seeds contribute protein, fats and other nutrients.
