Rava kesari is a familiar favourite across South Indian homes, especially during festivals, special occasions and family celebrations. Its soft texture, rich ghee flavour and mild cardamom aroma make it a simple dessert that rarely needs a special introduction.
Rakhi Purnima is all about spending time with family, and a homemade sweet can make the celebration feel a little more special. Rava kesari is one such option because it does not take much time or complicated preparation.
The secret to getting that soft, smooth texture is the amount of water and the way the rava is cooked. Using three cups of water for one cup of rava helps keep the kesari soft even after it cools.
Ingredients :
One cup Bombay rava or upma rava
One and a half to two cups sugar, depending on how sweet you like it
Three cups water
Half a cup ghee
Cashews and raisins as needed
Half a teaspoon cardamom powder
A pinch of saffron, optional
Method
Start by heating about two tablespoons of ghee in a pan. Add the cashews and raisins and fry them on medium heat until the cashews turn lightly golden. Take them out and keep them aside.
Add some of the remaining ghee to the same pan and put in the rava. Keep the flame low and roast it patiently. There is no need to brown the rava. The important thing is to cook it until a pleasant roasted aroma comes through.
Once the rava is roasted, transfer it to a plate for a moment. This small step makes it easier to control the cooking process when the hot water is added.
Now pour three cups of water into the pan and bring it to a good boil. If you are using saffron, add it at this stage. You can soak the saffron in a little warm milk beforehand and then add it to the water for a richer colour and aroma.
Lower the flame before adding the roasted rava. Add it gradually while stirring continuously. This is the part where a little attention makes a big difference. Keep stirring so that lumps do not form.
The rava will slowly absorb the water and the mixture will begin to thicken. Let it cook properly before adding sugar. Adding sugar too early can interfere with the rava cooking evenly.
Once the rava is soft and fully cooked, add the sugar. The mixture will loosen slightly at first, which is normal. Continue stirring until the sugar melts completely and the kesari starts becoming thick again.
Add the remaining ghee and cardamom powder towards the end. Stir well and let it cook for another minute or two. When the mixture starts leaving the sides of the pan and a little ghee becomes visible, it is ready.
Finally, add the fried cashews and raisins. Give everything a good mix and switch off the stove.
For a soft rava kesari, do not rush the roasting or cooking process. The rava should be cooked completely before the sugar goes in. The three to one water ratio also helps give the dessert a soft consistency.
Ghee is another important part of the recipe. A generous amount gives the kesari its familiar shine and rich taste. If you prefer a lighter version, you can reduce it slightly, though the texture may not be quite as silky.
Serve the kesari warm and it tastes especially good. You can also let it cool and set it in a tray before cutting it into small pieces.
