Egg Bhurji Sandwich Ready in Just 5 Minutes for Busy Mornings

This quick egg bhurji sandwich combines scrambled eggs, vegetables and toasted bread into a filling breakfast that can be prepared quickly on busy mornings.

Mornings can get hectic with work, school and other daily responsibilities, leaving little time to prepare an elaborate breakfast. That is where a quick egg bhurji sandwich can come in handy.

The recipe uses basic ingredients that are usually easy to find at home. Eggs provide the main filling, while onion, tomato and green chilli add flavour. Toasted bread brings everything together for a simple and satisfying meal.

To make the bhurji, heat a little oil or butter in a pan and add finely chopped onion and green chilli. Cook until the onion softens, then add chopped tomato and let it cook for a short while.

Crack two eggs directly into the pan and stir continuously. Add salt, a little chilli powder and black pepper according to taste. Keep mixing until the eggs are fully cooked, then finish with some chopped coriander.

While the egg mixture is cooking, lightly toast four bread slices with a little butter on another pan. They can be toasted until lightly crisp, depending on personal preference.

Once everything is ready, spread the warm egg bhurji evenly over one slice of toasted bread. Place another slice on top and press gently. Cut the sandwich in half and serve while it is still warm.

Tomato sauce or a favourite chutney can be served alongside the sandwich. For an extra serving of vegetables, chopped capsicum or carrot can also be added to the bhurji.

Make sure the eggs are thoroughly cooked before serving. With a little preparation, this five minute recipe can turn a rushed morning into a much more satisfying breakfast.
