Soft Rava Laddus With an Easy Homemade Method

A simple twist on traditional rava laddus makes them softer and richer, using milk soaked semolina, roasted rava sheets, powdered sugar, ghee and crunchy dry fruits

Rava laddus are a familiar favourite during festivals and family celebrations, but the traditional sugar syrup method can sometimes leave them harder than expected. A small change in the preparation can make a noticeable difference.

Instead of directly roasting the semolina and binding it with sugar syrup, this method first combines rava with milk. The mixture is rested, shaped into thick flat sheets and lightly cooked with ghee. Once cooled, the sheets are ground into a fine powder before the remaining ingredients are added.

To prepare the laddus, you will need one cup of Bombay rava, half a cup of milk, one fourth cup of ghee, half a cup of sugar, four to five cardamom pods, and a small quantity of chopped almonds, cashews and pistachios. Two teaspoons of desiccated coconut can also be added for extra flavour.

Begin by placing the rava in a bowl. If the semolina is slightly coarse, grind it briefly in a mixer. Add the milk gradually and mix until a soft dough forms. Let it rest for about 15 to 20 minutes so the rava can absorb the milk.

After resting, check the dough. If it feels too firm, add a little more milk. Divide it into two portions and press each portion into a moderately thick flat sheet. A greased cover or butter paper can make this step easier.

Heat a pan over medium flame and place one rava sheet on it. Cook both sides briefly before applying a little ghee. Continue roasting until the sheet is properly cooked but not overly browned. Repeat with the second portion and allow both sheets to cool completely.

Break the cooled sheets into small pieces and grind them into a fine powder. Add the cardamom while grinding so its aroma blends evenly with the rava. Transfer the powder to a large bowl.

Next, grind the sugar separately and mix it into the rava powder. If powdered sugar is already available, it can be used directly. Add the desiccated coconut if preferred and combine everything well.

Heat a few teaspoons of ghee in a small pan and roast the chopped almonds, cashews and pistachios until lightly golden. Add the roasted nuts along with the warm ghee to the rava mixture. Mix thoroughly and check the consistency. If the mixture does not hold together easily, warm a little more ghee and add it gradually.

Take small portions of the mixture and shape them into round laddus while the mixture is still slightly warm. Allow the finished laddus to cool before storing them.

When kept in an airtight container, these homemade rava laddus can stay fresh for around 15 days. The milk based preparation and roasted rava give them a noticeably softer bite, making this version worth trying when you want a simple sweet without worrying about a hard texture.
